Recipe of the Week
Mamma mia, these tacos!
This recipe suggests using corn tortillas, which are considered a whole grain and are lower in carbs, calories, and fat than flour tortillas. That said, I tend to be partial toward flour tortillas for tacos because they hold the filling much better without crumbling so quickly. But for chips and nachos, corn is the only option (IMO).
Shrimp is a lean source of protein, and when you combine it with spices (cumin, oregano), produce (red peppers, red onion, cilantro), and cheese (feta), you'll have a refreshing meal for yourself, your friends, or your entire family. Go ahead and make a big batch for several days' worth of delicious tacos!

Victoria Cast Iron Tortilla Press
Victoria Cast Iron Tortilla Press
Whenever I make my own tortillas from scratch, I prepare the dough and flatten it between my cutting board and my cast-iron skillet. It's a totally acceptable approach, but if you want to follow an easier, more intuitive process, I recommend getting an actual press like this one!
