I don't know if it's underrated, but I'm not sure if many people have one. It's an easy way to blend soups and sauces without having to transfer to a blender or food processor. I love it for making homemade salad dressings, blending up a quick smoothie in a mason jar, or even blending some fruit into pancake batter! If pour-over is your preferred method and you make coffee for multiple people, I highly recommend getting a Chemex. It's pretty to look at and super functional. The glass is heat resistant, so you can keep your coffee hot on the stovetop while you're brewing. There's also something about the thickness of the filters that adds an extra smoothness to the taste.
