A different kind of Cobb salad
When I choose red meat to cook for a salad, I almost always make some version of a Cobb using whatever I have in my fridge. Today's recipe is a slight variation of what you might expect. Instead of bacon bits, there are chopped pecans; feta is used in place of blue cheese; and the dressing is simply olive oil and balsamic vinegar. I've always been a romaine salad person, so I already intend to swap out the spinach.
By no means is this a "traditional" Cobb — it's more of a choose-your-own-adventure recipe. If you don't have a chronic condition or dietary restriction that causes you to limit your red meat consumption, I definitely suggest that you grill up a nice juicy steak as your protein. But a veggie patty or another plant-based protein option is a fine alternative!

A few weeks ago my friend pulled a standing mat out from under his bed to show me how comfortable it felt to stand on. I was skeptical, but stepping onto it was like hopping onto a fluffy cloud.
