Today's recipe is a slight variation of what you might expect. Instead of bacon bits, there are chopped pecans; feta is used in place of blue cheese; and the dressing is simply olive oil and balsamic vinegar. I've always been a romaine salad person, so I already intend to swap out the spinach. | By no means is this a "traditional" Cobb — it's more of a choose-your-own-adventure recipe. If you don't have a chronic condition or dietary restriction that causes you to limit your red meat consumption, I definitely suggest that you grill up a nice juicy steak as your protein.
