It's been a hot minute since I've thought of cauliflower as the main ingredient for a meal — but that's what gives this particular hash variation its healthy twist! Instead of using chopped potatoes, you'll grate or process (save yourself the time and energy) 8 cups of cauliflower — essentially, you're making your own cauliflower rice.
Personally, I would sub out the turkey sausage for Beyond ground beef and add frozen spinach and diced bell pepper to have myself a meat-free, veggie-loaded meal. But this is really a basic hash recipe — get creative with whatever ingredients you have around!
