Zucchini noodles with creamy mushroom-Parmesan sauce
The other weekend, I was ranting to a friend about how a white sauce is severely underrated and undervalued in today's society. My suspicion is that most people assume it's made with heavy cream and contains a lot of saturated fat — which is a fair assumption in many cases, for sure. But guess what? Today's sauce doesn't call for heavy cream. Instead, the Parmesan cheese emulsifies with water, almond butter, and fresh herbs to create a thick, rich sauce — with a fraction of the saturated fat.
Now I'm no Carmen "Carmy" Berzatto (please tell me you've finished the new season of "The Bear"?!), but I highly recommend taking your time and letting the mushrooms and onions hang out in the pan for a few extra minutes. There are few things more satisfying to the taste buds than caramelized aromatics and vegetables. Say it with me: Yes, chef!
