A protein-rich meal — or snack!

Oh, oh, ohhh, it's oatmeal.

Recipe of the Week
Mixed berries oatmeal — with a protein kick
"Oatmeal? How cliché" — this is what you're probably thinking. Hear me out! Recently, I had my second two-times-a-year craving for oatmeal and just happened to find this recipe. I always forget to think about meal prepping oatmeal for individual snacks later.
Oats have a ton of key nutrients, including cholesterol-lowering soluble fiber. The berries add antioxidants and a little sweetness, and the eggs provide that extra punch of protein. If you want to keep this a sweet-ish treat, you could replace the eggs with a scoop of protein powder in your preferred flavor.
That's definitely something I'm considering experimenting with when my first oat craving appears in 2025.

I have a dare for you: Make your own vanilla extract. All you have to do is let vanilla beans soak in vodka for a few months for the flavor to combine with the alcohol. I did this a few years ago, and my jar hasn't come close to running empty! I prefer jars like these because of how tightly they seal, which is essential for long lasting extract.
