There's nothing as comforting as a warm bowl of beef bourguignon
A cook time of more than 3 hours sounds daunting, but trust the process. This time is necessary to allow all the flavors from the herbs, meat, alcohol, and stock to meld together.
Like most bourguignon recipes, this one calls for an entire bottle of red wine and some cognac. If you don't want to include either, I'm pretty sure extra stock will be fine — the taste will just be a bit different from what you'd normally eat at a restaurant. But let me know if you have other ideas! And while we're on the topic of ditching certain ingredients, I normally skip adding bacon because I find it unnecessary and the dish is heavy enough.
We have to address the elephant in the room: No, this isn't the "healthiest" meal you can cook. But will it make you feel warm, cozy, and happy you made it? Absolutely. And at the end of the day, that's how food should leave you feeling.
BTW: Beef bourguignon develops more flavor over time, so make it a day ahead or freeze leftovers to eat when you're craving a hearty meal.
