Crispy cheesy quinoa burgers with avocado cream
As someone who eats meat on a regular basis, I actually dislike when a plant-based meal tries too hard to mimic meat's taste, texture, and appearance. I don't know — I think there's something about tricking myself into eating more vegetables by thinking it's "just like real meat" that seems silly.
Which is one of the main reasons why I chose this quinoa burger. The seasonings and additions (including cheddar cheese!) don't mask the vegetable flavor — they enhance it. Plus, the sauteed spinach as a topping is an unsuspecting delightful twist! And do NOT skimp on the lime-avocado cream. There's a 70% chance you'll make that your go-to burger condiment for life.

I have to credit Carla Lalli Music for showing me the light! In one of her YouTube videos, she describes how she uses her press to flatten meat so that each side cooks evenly. And everyone knows that cutting into a part-raw, part-overcooked piece of chicken is the worst feeling. Why have I been using a small Dutch oven over my big cast-iron skillet?!
