A light and lemony pot of summer veggies and shrimp
This summer soup is incredibly simple to make and easy to love. Whether you're nursing a cold or just want to make a big one-pot meal for the week, it's a no-fuss way to shovel a bunch of veggies into your world. Plus, isn't it great when you only have to dirty a single dish to make dinner?
The star ingredient is definitely the shrimp — it's a protein powerhouse with an impressive resume of additional nutrients. For example, shrimp is one of the best sources of iodine, a mineral many people don't get enough of. We need iodine for proper thyroid and brain function.
Probably not. It's true that shrimp is high in cholesterol, but eating it may not raise your levels. That's because only about one-quarter of people are sensitive to dietary cholesterol. In fact, when eaten in moderation, shrimp can be part of a heart-healthy diet.
