| My job was extra fun this week because I got to talk to the one and only Sunny Anderson about something we both love dearly: food! Anderson is the host of Food Network's "How'd That Get on My Plate?" and the author of the best-selling cookbook "Sunny's Kitchen." But a lesser-known fact is that Anderson lives with ulcerative colitis (UC), an autoimmune condition that affects up to 900,000 people in the United States. | Anderson recently helped launch the ThisisLivingwithUC.com campaign, which includes many helpful resources and original UC-friendly recipes. | In today's newsletter, Anderson lets us in on her approach to food and why she's so obsessed with crab. Plus, she shares a fish taco recipe that you can enjoy regardless of your health status. | But first, more nutrition news for your nourishment: | | | | Eat up, Ginger Wojcik Newsletter Editor, Healthline | | | Written by Ginger Wojcik September 24, 2023 • 4 min read | | | | | | How to enjoy your life as much as Sunny Anderson | *The responses below have been edited for length and clarity. | Q: As we know, there isn't an official diet for UC. How did you figure out what foods worked for you and what foods you ultimately had to leave behind? | A: When I was diagnosed at 19, one of the first things that my doctor did was talk to me about journaling what I was eating and how I felt afterwards. This helped to pinpoint some of the things that might exacerbate my system. And now, many years later, I'm really a pro at it, so I almost never think about it. But at the beginning, it was just me talking to my doctors. | Q: Do you have any tips for eating out at restaurants and/or in group settings when you live with a condition that restricts the foods you can eat? | A: We've all done the thing where we check the menu before we get somewhere. But then we show up and everything is different. So, my advice would actually be the same advice I give you for eating at home, which is just knowing what you can and can't do and what will exacerbate your system. | There's always something on the menu that works — just like if you're grocery shopping. So, I would just invite people to get out there and enjoy life, just like I am. | Q: What would you choose as your last meal? | A: People ask me this question all the time. My answer now is simply crab. I want all the crab. I want king crab, I want them grilled, I want them boiled, I want them sauteed, I want them in a pasta. You can put them on a salad for me. I'll eat the greens! Because about 8 years ago, I became allergic as an adult. And I miss crab! So, it will be my requested last meal (but also my last meal because it will kill me). | But yeah, crabs ... all kinds. Kind of like Forrest Gump and his shrimp. | | | | Pan perfection | | | | | T-fal Ultimate Hard Anodized 2-Piece Nonstick Cookware Set | These pans are scratch-resistant, nonstick, and dishwasher-safe.
