My favorite meat-free steak
If you don't have a tofu press, I highly recommend getting one (I have an option for you below). In a pinch, you can follow the recipe's advice and place a heavy pot or pan over a tofu block to push out the water. Once the tofu is pressed, the rest of the cooking process is straightforward: Season all sides with salt and pepper and cook until the two larger sides are well browned.
The real flavor comes from the romesco sauce, which has a surprise ingredient: almond butter. I've never thought to add a nut butter to a red sauce until I found this recipe! Its addition gives the sauce an extra kick of protein — and I'm all for a nutrient-dense, filling meal.

I think I'm ready to cheat on my current tofu press. It works fine, but I know there are better options out there. I watched a how-to video of Tofuture's version, and I was instantly hooked. It uses elastic bands to press the tofu to whatever thickness you want. The best part is that you can set it, forget it, and come back to tofu ready to drain and marinate!
