Sausage, mushroom, and zucchini frittata
There are two great aspects to frittatas: They're easy to meal prep for several servings throughout the week, and any recipe can be tweaked according to the ingredients you have on hand.
While today's recipe suggests using sausage, mushroom, and zucchini, you can make whatever swaps you want!
  • Find an alternative to sausage if you want to limit processed meats (although bacon, ham, and other breakfast meats would fit into the same category).
  • Skip meat altogether to keep it vegetable-forward.
  • Replace the zucchini with broccoli, sweet potatoes, bell potatoes, spinach, or a combination.
  • Throw in other leftover herbs, such as chives or rosemary.
I have a friend who hates mushrooms, but for me, they're nonnegotiable. If you feel the same way as my friend, leave them out! Just don't expect me to come over for breakfast anytime soon 🙂. Our different preferences toward mushrooms aside, I think we can all agree that dashes of hot sauce and ketchup are always delicious additions to frittatas. When I'm feeling fancy, I'll add a dollop of sour cream too. Give it a taste and thank me later.
