Um, yum: chili glazed salmon with avocado kale salad
One of my go-to grocery hacks is to buy frozen salmon from Whole Foods in bulk. These packs are usually much more affordable than buying fresh salmon individually. And they'll keep in the freezer for a long time.
Here are a few tips from me that you might want to consider:
  • Skip the walnuts if you want. Yes, they have many health benefits, but they're also fairly expensive. If you're really into the idea of them as a crunchy topping, go for it!
  • Massage your kale. I typically use a combo of lemon juice and olive oil to break down the fibrous green. My preference is usually dinosaur or Tuscan kale.
  • Nix the chili powder, especially if you have a low tolerance for heat! Olive oil, salt, and pepper are a solid backup.
