Knock out your daily veggie count with this fresh chopped salad
Healthy eating doesn't need to be complicated or time consuming. Case in point: this chopped salad made with avocados, tomatoes, cucumber, red pepper, and onion.
While the salad may not stand as a meal on its own, those five veggies provide a lot of important nutrients. Plus, the olive oil and red wine vinegar dressing brings healthy fats and antioxidants to the party.

Avocados — where do we even begin?! Long before they were a symbol for millennial spending habits run amok, these rich fruits (technically, they're berries) were a staple of Latin American cooking. No other food is quite like a rich, buttery avocado.
