You can also make it keto-friendly by skipping the sweetener. | One thing that makes chia seeds unique is their ability to absorb liquid. When you combine them with almond milk, you get a rich, creamy consistency that doesn't feel far off from a traditional tapioca pudding. And it doesn't have to be almond milk.
